I know the theory behind it – when an element is heated its electrons can absorb energy and the electron jumps to a higher energy level. When the electron jumps back it emits a photon of a certain colour.

So, how is this related to street lights, advertising signs and lasers?

They are light emitting, which means they give off photons.
